Ribeye vs tenderloin: which is better?

Ribeye and tenderloin sit at opposite ends of the steak world. Ribeye is rich, marbled and full of flavour, with a little more bite. Tenderloin — the cut behind filet mignon and chateaubriand — is the softest steak, lean and delicate with a milder taste.

The simple difference: ribeye is the flavour cut, tenderloin is the tender cut. Ribeye has more marbling, which gives it deeper beef flavour and juiciness. Ribeye comes from the upper rib, a part of the animal with plenty of intramuscular fat. That marbling melts as it cooks and bastes the steak from the inside, which is why ribeye tastes so beefy and stays juicy.

A tomahawk steak is essentially a ribeye with the long rib bone still attached. The flavour and texture are close to ribeye, but the presentation is bigger and more dramatic for the table.

Tenderloin, the tender cut.

Tenderloin runs along the spine and barely works, so it is naturally soft. It is the most tender steak, but because it is leaner than ribeye, the flavour is gentler.

Filet mignon is cut from the tenderloin. Chateaubriand is the thicker centre-cut of the tenderloin, usually cooked and carved for two people to share.

Which one to order.

Want a big, beefy, juicy steak and do not mind a little chew? Order ribeye. Want the softest possible bite and a cleaner, lighter flavour? Order tenderloin.

How fire treats each.

Ribeye loves a hot charcoal sear because the fat renders, crisps at the edges and keeps the meat juicy. Tenderloin also takes a sear beautifully, but because it is lean, it needs a closer eye so it does not dry out.
